Who says that eating healthy has to be boring? This healthy Spicy Thai Salad plate will have your taste buds kicking with a perfect combination of healthy ingredients like chilies, mushrooms, cilantro, and coconut oil.
Main Ingredients:
- ½ small pack mung bean noodles
- 1 tbsp Onnit organic coconut oil
- 1-3 thai chilies
- 2 cloves chopped garlic
- 4 oz sprouted tofu
- ½ cup chopped celery
- 1/3 cup broccoli
- 1/3 cup shimeji mushrooms (if not available, any small
- mushroom will do)
- ¼ cup green onion
- 1/3 cup shredded cabbage
- ¼ cup shredded carrots
- 1 lrg roma tomato
- ½ cup shredded romaine lettuce
- ¼ cup roughly chopped fresh cilantro
- ¼ cup roughly chopped fresh mint
Dressing Ingredients:
- 1-2 fresh squeezed limes
- 2 tbsp rice vinegar
- 2-3 tbsp fish sauce
- 1-1½ tbsp Once Again raw organic honey
- garlic chili paste (for an extra kick!)
- Onnit Himalayan salt to taste
Instructions:
Let your noodles soak in warm water for 10-15 min. Drain. Heat coconut oil over medium/high heat in a sauté pan. Add chilies, garlic, celery, broccoli and sauté for 1 minutes. Then add tofu, mushrooms and half the green onions, sauté for 2 minutes. Place in fridge to cool for 5-10 minutes.
Mix all ingredients for the dressing and set aside. Combine all remaining ingredients, drained noodles, cooled veggies and dressing. Serve room temp or slightly chilled.
