Whether you’re looking for a grab-and-go lunch or a pre/post workout meal, vegetarian sandwiches offer a quick-and-easy solution with endless variations and flavors. This Grilled Veggie Sandwich w/ Goat Cheese & Herbs, is a hearty and delicious vegetarian sandwich that will fuel you all afternoon.
Main Ingredients:
1/4 eggplant, cut into planks
1/2 zucchini, cut into planks
red onion, sliced
tomato, sliced
baby spinach
1 garlic clove, chopped
1/8 tsp red pepper flake (adjust to your spice level)
1-2 tsp Herbs de Provence*
Salt & Pepper
goat cheese
basil, sliced thin or torn
favorite healthy bread, toasted or grilled (gluten free multigrain pictured)
Vinaigrette:
2 tbs balsamic vinegar
1/2 clove garlic, minced
2 parsley sprigs, chopped
1/8 tsp dijon mustard
pinch of mustard seed
Salt & Pepper
2 tsp olive oil
Rub eggplant, zucchini and onion with herbs de provence, red pepper flake, garlic, salt, pepper, & olive oil. Grill or sauté for a couple minutes till veggies are tender, or have nice grill marks. Set aside.
Assembly:
Layer goat cheese on bread, top with eggplant, zucchini, a drizzle of vinaigrette, spinach, tomato, onion and basil.
*Herbs de Provence is a blend of dried herbs, typically containing savory, marjoram, rosemary, thyme, oregano & lavender.
